Pork Chops in Raspberry Sauce

Ingredients :



½ Teaspoon crushed dried thyme

½ Teaspoon crushed dried sage

¼ Teaspoon salt

¼ Teaspoon pepper

4 (4 oz each) boneless pork loin chops

1 Tablespoon butter

1 Tablespoon olive oil

¼ Cup seedless raspberry jam


2 Tablespoons orange juice

2 Tablespoons white wine vinegar

4 sprigs fresh thyme (optional)



Procedure :



Preheat your oven to 200⁰ F (95⁰C).
In a bowl preferably small, mix crushed thyme, crushed sage, salt and pepper.
Rub the mixture evenly onto the pork chops.
Melt butter in a nonstick skillet or large pan and add olive oil. When the oil is hot enough, lay pork chops on the pan and cook for 4 to 5 minutes per side. Remove pork chops and cover them with foil to keep warm.
Pour raspberry jam, orange juice and vinegar into the skillet and combine well. Let the sauce boil and cook for 2 to 3 minutes or until the sauce is reduced to the consistency that you like.
Spoon the sauce on the serving dish and place the pork chops on top. You can garnish fresh thyme if you desire.

Grilled Pork Chops with Peach Salsa

Ingredients :



Peach salsa:

½ diced red onion

2 Peaches, pitted, halved and diced

1 Tablespoon lime juice

1 Teaspoon olive oil

1 tablespoon chopped cilantro leaves

Pinch kosher salt

Freshly ground black pepper



Pork chops:

4 pork chops, end cut

2 Tablespoons canola oil

2 Tablespoons chili powder

1 Tablespoon salt

1 Tablespoon freshly ground black pepper



Procedure :



For the salsa: In a salad bowl, toss all the salsa ingredients well and set aside.
Preheat your outdoor grill or stove top grill pan over medium to high heat.
Brush oil onto the pork chops.
Combine salt, pepper and chili powder in a small bowl.
Sprinkle generously the mixture on each side of the pork chops.
Grill the pork chops until cooked about 4 to 6 minutes per side.
Set your pork chops in a serving dish and allow to rest for 5 minutes before serving.
Serve the grilled pork chops with the peach salsa.
